Miso-Orange Glazed Chicken served with a side of charred baby bok choy 🍊🍗

 

Ingredients:

For the Miso-Orange Glazed Chicken:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup white miso paste
  • 1/4 cup orange juice
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons sesame oil
  • Salt and pepper, to taste
  • Sesame seeds, for garnish (optional)
  • Sliced green onions, for garnish (optional)

For the Charred Baby Bok Choy:

  • 4-6 baby bok choy, halved lengthwise
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Crushed red pepper flakes, for added spice (optional)

Instructions:

1. Prepare the Miso-Orange Glazed Chicken:

  1. In a small bowl, whisk together the white miso paste, orange juice, soy sauce, honey, minced garlic, grated ginger, and sesame oil until well combined.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Place the chicken breasts in a shallow dish or resealable plastic bag, and pour the miso-orange glaze over them. Ensure the chicken is evenly coated with the marinade. Marinate in the refrigerator for at least 30 minutes, or ideally up to 2 hours for maximum flavor.
  4. Preheat your grill to medium-high heat. Remove the chicken from the marinade, allowing any excess marinade to drip off.
  5. Grill the chicken breasts for about 6-8 minutes per side, or until cooked through and nicely charred on the outside. Baste the chicken with the remaining marinade while grilling for extra flavor.

2. Prepare the Charred Baby Bok Choy:

  1. Preheat a grill or grill pan over medium-high heat.
  2. Brush the halved baby bok choy with olive oil and season with salt, pepper, and crushed red pepper flakes if desired.
  3. Place the bok choy cut side down on the grill and cook for about 3-4 minutes, or until lightly charred. Flip and cook for an additional 2-3 minutes, or until tender-crisp.
  4. Remove the charred baby bok choy from the grill and serve alongside the Miso-Orange Glazed Chicken.

3. Serve: Plate the Miso-Orange Glazed Chicken alongside the charred baby bok choy. Drizzle any remaining glaze over the chicken and vegetables if desired. Serve hot and enjoy your delicious meal!
